Chicken with Creamy Spinach and Artichokes


We eat a lot of chicken in this household. Many Sundays I’ll make a big batch of the BEST Crockpot Chicken and we’ll use the chicken in all sorts of different recipes throughout the week. Think Tacos, Salads, Pasta Dishes. Today, I tried something different and made this Chicken with Creamy Spinach and Artichokes and I’m so happy that I did!

I can’t get over how amazingly delicious this recipe is!

I discovered this recipe in Good Housekeeping and it is definitely one of my new favorite ways to make chicken.

It’s super quick so this chicken recipe is perfect for a weeknight meal. It’s even impressive enough to serve your guests for your next dinner party. Friends, this is on the menu the next time you come over!

Chicken with Creamy Spinach and Artichokes

Chicken with Creamy Spinach and Artichokes


  • (4) boneless, skinless chicken breasts
  • 2 lemons
  • 1 14-oz. can of artichoke hearts
  • 2 cloves garlic
  • 1/2 cup dry white wine (not sweet)
  • 1/4 cup sour cream or greek yogurt
  • 1 bunch spinach leaves, stems removed, lightly chopped
  • kosher salt and black pepper
  • olive oil


  1. Season the chicken breasts with salt and pepper. In a skillet on medium, cook chicken in 1 Tbl oil, 6 to 8 minutes per side, until cooked through and juicy. Set aside and squeeze juice of 1 lemon on top.
  2. Drain can of artichoke hearts and add to pan. Sear at medium-high heat for 3 minutes or so to add color. Lower heat to medium and add garlic and white wine, stir. Cook for 2 minutes. Turn heat off. Stir in sour cream or yogurt and spinach leaves. Season with salt and pepper and stir. Spinach should lightly wilt. If it doesn't, simmer on low for one or two minutes until the spinach is cooked.
  3. Place spinach and artichokes on plate, add chicken breast, and serve with slice of lemon.
