Skillet Cajun Spiced Tilapia with Tomatoes

It’s Saturday and I’m still exhausted from this previous week’s work.  I need a vacation.  After putting in another 10 hour day, Mister was kind enough to take over the kitchen.  I saw this recipe on Skinny Taste and shared it with him.  He did an amazing job with it.  I’m quite proud actually.  Now, if only I could get him to clean his room more often.  One step at a time.

Skillet Cajun Spiced Tilapia with Tomatoes

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yields: Serves 4

Skillet Cajun Spiced Tilapia with Tomatoes

This mildly spicy dish is easy to make on a weeknight. Serve with your favorite vegetable.


  • 1 teaspoon olive oil
  • 4 (6-ounce) pieces of white fish (flounder, tilapia, etc)
  • 3/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 3/4 cup green bell pepper, chopped
  • 2 1/2 cups tomatoes, chopped
  • 1 tablespoon Cajun spice seasoning


  1. In a deep skillet, cook the onion and garlic in olive oil on medium heat until soft. Add tomatoes, peppers and spices, stir and cook until tomatoes are soft, about 3 minutes.
  2. Lay fish fillets in the sauce, cover and cook on medium-low until fish flakes easily, about 12 to 15 minutes. To serve, place fish on plate and spoon sauce on top.
